Laham Mandi is one of the traditional dishes of Yemen. It is the most popular food in Saudi Arabia but the people from all over the world love to eat this meal. This dish consists of rice and Mutton.

To eat a perfect Laham Mandi is a dream of many people. Its recipe is very easy and simple; you can easily prepare it at home. The preparation time of this Laham Mandi is almost 3 to 4 hours.
Ingredients required for Laham Mandi: This time depends on the marinating time of mutton; its cooking time is just one hour. The ingredients required for the preparation of Laham Mandi are;
- Rice (2 cups)
- Mutton (1kg)
- 2 Capsicum (sliced)
- 2 Carrots (grated)
- Chicken stock (4 cups)
- Olive oil (4 to 5 tablespoons)
- 4 Cloves
- 2 Bay leaf
- Salt (as required)
- Ginger powder 1 tsp.
- Black pepper (10 to 12)
- Nutmeg (1 pinch)
- Green Cardamom
- 4 Sliced lemon
- Water (1 cup)
- Almonds half (cup for garnishing)
Step 1: First of all, add nutmeg, bay leaves, ginger powder, black pepper, green cardamom, and cloves in a grinder and grind well until it turns into a powder form.
Step 2: Now take out these ground spices in a bowl and add lemon, 1 cup of water and two tablespoon oil to it and mix it well. Marinate the mutton with this mixture and leave it for at least 2 to 3 hours. So that the spices can be absorbed well in the mutton and it will give a better taste.
Step 3: This should be shifted to an oven tray and cover it with an aluminum foil. Now bake this mutton in the oven for 40 minutes.
Step 4: Take it out from the oven and cook on the flame until all the water dries.
Step 5: Take a small piece of coal and place it in the mutton pan, first place a small piece of aluminum foil on it then inflame the coal and keep on it. Add a few drops of oil on the coal and immediately cover the pan so that all the smoke remains inside.
Step 6: Heat 2 to 3 tablespoon of oil in another pan. Add chicken stock and Mandi Spices in it and bring it to boil. Add rice and salt to it. Cook these rice until the water dries.
Step 6: When a little amount of water is left in the rice add capsicums and carrots to it and mix them with rice. Now cover the rice and steam on a very low heat for 10 or 15 minutes.
Step 7: After 15 minutes check the rice if they are ready or not. Rice will be perfectly ready within 15 minutes. Take the rice out in a platter and place the cooked mutton on it. At the end garnish with almonds. Now Laham Mandi is perfectly ready.
